marzipan. A confection made of almond paste and sugar molded in various forms. One sweet fable tells of a cook of 16th-century Brandenberg, Germany, named Franz Marzip, who is said to have invented marzipan for his physician em- ployer. Other sources say that Oriental rulers had enjoyed the confection for centuries and that the crusaders brought it back to Europe in the shape of a coin of the time called a marchpane (which later became marzipan). In any case, Lubbeck, Germany is called “the world’s marzipan capital” today, famous for its Holstentors, cuisine’s most celebrated marzipan. |
