The Palace Hotel, born dur- ing the gold rush of 1849, destroyed in the earthquake of 1906 and rebuilt to become one of America’s greatest eating places, offers the following simple original recipe for the delectable dish: “Open oysters on deep shell, put in oven for about 3 or 4 minutes until oysters shrink. Pour off the liquor, then add small strip of bacon and cover with catsup and place in very hot oven for about 5 to 6 minutes until glazed to a nice golden brown.”
