词源 | eggplant. Eggplant of course, takes its common name from its supposed resemblance to a large egg in shape. The vegetable is generally known as the aubergine to the English. Its early reputation varied in Europe, where it was thought to induce in- sanity and was called the “mad apple,” but where it was also considered to be an aphrodisiac and, like the tomato, was dubbed the “apple of love.” Native to India, the fruits range in size and in color from purple-black to white. The name egg- plant is first recorded in 1767 in England, where the first culti- vated eggplants were indeed white and shaped like eggs. An earlier folk name for the fruit was “Guinea squash.” Vineland, New Jersey, advertises itself as the “Eggplant Capital of the World,” and at its annual Eggplant Festival serves many egg- plant dishes, including an eggplant wine.
