The name egg- plant is first recorded in 1767 in England, where the first culti- vated eggplants were indeed white and shaped like eggs. An earlier folk name for the fruit was “Guinea squash.” Vineland, New Jersey, advertises itself as the “Eggplant Capital of the World,” and at its annual Eggplant Festival serves many egg- plant dishes, including an eggplant wine.
