chelae. You may have eaten them many times, but you prob- ably don’t know their name. They are chelae, the large pincer- like claws of the lobster and other crustaceans, which are named from the Greek chelé for “claw.” They are usually band- ed at the market for good reason: among many other cases, one lobster chela nearly amputated a child’s finger, and another one reached up and snapped in half a Maine lobsterman’s pipe! |
