long pig. Partridge traces long pig, “human flesh as food,” to 1852, but says it was probably suggested by a translated Fijian phrase. It should be noted that the Fijians were so fond of human meat that the greatest compliment they could bestow on any Cordon Bleu dish was to say that it tasted “as tender as a dead man.” One Fijian chief (Ra Undre Undre) ate 900 people all by his lonesome, but Fijians were not the only people who thought that human flesh tasted like pig or pork and called it long pig—the Polynesians and Maori were great enthusiasts as well. A few tribes, however, thought that white man tasted like “roasted ripe banana,” while others said white man was a bit too tough.
