词源 | sushi. Japanese sushi bars have found great popularity in America within the last 30 years, and the word sushi has be- come familiar to many Americans. Sushi means “it is sour,” re- ferring to the vinegar and other ingredients used in making it. It is often composed of cold rice molded into small pieces and topped with raw seafood (sashimi). In sushi bars diners enjoy raw fish like maguro (tuna); jellyfish cut into strips like spa- ghetti; and a kind of shrimp (ebi) that is eaten whole still alive and wiggling. Of the ebi the Japanese particularly relish a squirming delicacy called ebi odori, which is made by shelling, gutting, and splitting a shrimp down the middle—the creature’s nerves are still functioning when it is pressed into a small ball of rice that doesn’t stop trembling until it is popped into the mouth. |
