backfin. The choicest prime crabmeat from the blue crab (Callinectes sapidus) comes from the rear or back bony cham- bers of that esteemed creature. The meat is called backfin be- cause it is found in that location near the crab’s fins, not because the crabmeat comes from the fin, which contains little or no meat at all. The expression dates back over a century and is still common among people who know their crabmeat. |
