The caps worn with their gowns by high school and college graduates in America were apparently named by some anonymous mid-19th-century wit who thought they resembled the square boards masons still use for holding mortar. The cap began life as ecclesiastical headgear in the 17th century and wasn’t worn by university students until the early 1800s or thereabouts.
