In the 17th century the French called a piece of lemon or orange peel added to a drink to give it flavor a zest, a term that may have derived from the Latin scistus, “cut.” Zest passed into English and came to mean anything agreeable or piquant in flavor and, finally, hearty enjoyment or gusto. |
