R months. Many people believe that oysters are safe to eat only during months containing the letter R. So common is this canard that it has been commemorated in the poem “The Man Who Dared” by Stoddard King: “Let’s sing a song of glory to Themistocles O’Shea, / Who ate a dozen oysters on the second day of May.” The U.S. Bureau of Commercial Fisheries has been trying to dispel this myth for years, but the rumor persistently finds its way into print. The truth is that American oysters can be eaten safely at any time of the year. In point of fact, Ameri- can oysters reach the peak of perfection in May and June, months without an R between them, when they are fatter and taste better because they are beginning to store glycogen in preparation for summer spawning. During summer and early autumn, oyster flavor declines. Due to the expenditure of the glycogen, the meat becomes skimpier and the nectar watery. Ironically, the traditional oyster harvest time is still in the fall because the demand is seasonal and oyster prices highest at this time. The “R” myth derives partly from those days when poor refrigeration resulted in spoilage, but more important is the fact that the flat European oyster (Ostrea edulis), only one of a hundred oyster species, is definitely not desirable for hu- man food during the “non-R” months. Ostrea edulis is unique in that its young are retained by the mother until tiny shells are developed, and the presence of those gritty shells makes the Eu- ropean oyster undesirable in the summer.
