词源 | hobo egg. An egg made by cutting a round center out of a piece of bread, putting the bread in a hot greased pan, dropping the egg into the center without breaking the yolk, and frying the whole until done (sometimes turning it over). Called a “hobo egg” because in the Great Depression era hoboes on the road were said to make it over their fires; called an “Alabama egg” for no reason I’ve been able to find. Years ago I thought I invented the dish as dinner for my kids, who called it “an egg in the hole in the bread.” Actually, I did invent it, but others did, too. I can only add that it is as delicious as the egg sandwiches Ernest Hemingway describes in his short story “The Battler.” Also called gas house eggs. |
