switchel. Switchel is old sailor’s slang for a very thirst- quenching drink of molasses and water seasoned with vinegar and ginger. However, the word has been used in contexts re- ferring to alcoholic drinks as in Jeremiah N. Reynold’s 1835 account of a whale hunt for Mocha Dick, the prototype of Herman Melville’s Moby-Dick. Therefore, switchel almost surely was commonly seasoned with rum, as several writers suggest. Unfortunately, the origin of the word, first recorded in a 1700 poem by Philip Freneau, is unknown, but there is a spiritless recipe: Mix together one gallon water, two cups sugar, one cup molasses, one cup vinegar, one teaspoon ginger, and “hang in the well to cool.” Add what you want to make it spiritous.
