词源 | black-eyed peas. So named for their black hilum, black-eyed peas (Vigna sinensis) are simply a variety of cowpeas that origi- nated in India thousands of years ago (though the name “cow- pea” originated in colonial America). George Washington grew these peas, which are actually botanically closer to the bean than the pea family. They are often cooked southern style: stewed with a bit of ham or pork fat. Black-eyed peas go by many names in the South, including “crowders,” “black bean,” “black-eyed bean,” “black-eyed susan,” “bung belly,” “China bean,” “cow bean,” “cream pea” and even “chain-gang pea” because they are said to be fed to prisoners on chain gangs.
