lemon sole. Sour lemons have nothing to do with lemon sole, except that lemon juice might be squeezed on the fish before eating. The term is an established redundancy; when we say lemon sole we are saying “sole sole,” for the lemon part is a cor- ruption of the French limande, for “sole.” The sole was so named because its shape was thought to resemble the sole of the foot. |
