mustard. Mustard takes its name from the must or “new wine” that was first used in mixing the paste, which is made from various plants of the Brassica genus, including, chiefly, Brassica nigra, “black mustard,” and Brassica hirta, “white mus- tard.” Frederick the Great believed mustard did so much for his masculinity that he invented a drink made with powdered mustard, champagne, and coffee. The history of hot mustard as an aphrodisiac is a long one. Rabelais, for example, writes that his lusty Demisemiquaver friars “began their meal with cheese, ending it with mustard and lettuce, as Martial tell us the an- cients did. As each received a dishful of mustard after dinner, they made good the old proverb: Mustard after dinner / is good for saint and sinner.”
