We remember Louis Pasteur for the germ-free pasteurized milk that we drink in safety today, but we often forget that his well-known discovery arose out of experi- ments with France’s national beverage—wine. In the 1850s the immortal French chemist first discovered that certain bacteria caused rapid “artificial” fermentation of wine, then that fermentation could be prevented if the wine was ex- posed to high temperatures—which led to the method whereby milk and other foods could be sterilized by heating and rapid cooling. A mediocre student in chemistry, just as Einstein was in math, Pasteur made many brilliant discover- ies in his field. This compulsive worker—“I would feel that I had been stealing if I were to spend a single day without working”—proved that the spontaneous generation theory of disease was a myth, his most revolutionary scientific contri- bution. The Pasteur treatment honors his cure for rabies, which has reduced the death rate from hydrophobia to less than 1 percent. |
