词源 | Harvard beets. Harvard beets, often called pickled beets, are made from sliced beets cooked in sugar, cornstarch, vinegar, and water. There is no record that the dish was invented at Har- vard University, but it is said that the unknown chef noticed the resemblance in the color of the deep red beets to the crimson jersies of the then vaunted Harvard football team. Harvard, the first institution of higher learning in North America, bears the name of John Harvard (1607–38), an English minister who lived for a time in Charlestown, Massachusetts, and later willed the fledgling university half his estate and his library of over 400 books. Cambridge, Massachusetts, where Harvard is locat- ed, was named for England’s Cambridge University. |
