limburger; Limburger cheese. Limburger cheese was intro- duced to America by German immigrants in the 19th century and was soon well known for its pungent smell. The soft cheese takes its name from the Limburg province of Belgium (not Holland) where it is made. Its strong smell and flavor long ago made Limburger cheese the butt of many comedians’ and car- toonists’ jokes. And since the cheese from Belgium’s Limburg province was popularly thought to come from Germany, Lim- burger also became a derogatory term for a German during World War I.
