A humorous name for cafeterias where the food (generally sandwiches and drinks) was left out on tables for customers to choose from, each customer trusted to add up his or her bill honestly from the prices listed. Owners of these places generally agreed that people were quite honest about do- ing so, despite the cynical name given to such establishments. Nevertheless, few such places were left by the 1980s. |
