lima beans. Named for Lima, Peru by early European explor- ers who found them there, tender lima beans are often called butter beans in the U.S. The succotash made from them (and corn) derives from the Narraganset Indian msquatash, literally “fragments.” The lima bean’s botanical name Phaseolus is said to derive from the resemblance between the bean’s pod and a special type of ship that originated at Phaselis, a town in Pamphylia. |
