Kirby pickle. The Kirby pickle familiar to gardeners is a name applied generally to all pickling cucumbers and definitely is named in honor of a man. It bears the name of the developer of a once-popular pickling cucumber called the Kirby—Norvel E. Kirby of Philadelphia’s I. N. Simon & Son seed company, now out of business. Simon introduced the Kirby in 1920 and it remained popular until the mid-1930s, when more disease- resistant types replaced it. Its name remained, however, as a designation for all pickling cucumbers.
