词源 | kimchee. Korea’s traditional kimchee is a very spicy ferment- ed mixture of cabbage, onions, and often fish, highly seasoned with horseradish, garlic, ginger, and red pepper. There are sev- eral kinds, the most celebrated being kakutaki kimchee. The dish is often prepared in November and buried in the ground in large earthen jars to preserve it throughout the cold months. South Korean troops fighting in Vietnam had to be supplied with kimchee to bolster their morale, for a Korean meal with- out it is virtually unthinkable—there is even a Korean proverb saying, “We can live a whole year without meat, but without kimchee we can hardly live a week.” Many foreigners, however, find that kimchee burns their palates and complain that it has a strong, unpleasant odor. |
