jerky. Jerky, first recorded in 1850, is dried and smoked strips of dried beef. Much used by travelers in the West, jerky is sim- ply the Anglicization of the Spanish charqui for dried meat, and the Spanish word was often used instead of jerky. Charqui, in turn, comes from the Incan echarqui for dried meat. See biltong. |
