gumbo filé. William Read, in Louisiana-French Cooking (1931), explains the origins of this term: “Gumbo [is now] ap- plied to other kinds of gumbo thickened with a powder pre- pared from sassafrass leaves. This powder goes by the name of filé, the past participle of French filer, ‘to twist’; hence gumbo filé signifies properly, ‘ropy or stringy gumbo.’ ” |
