词源 | fugu. The Japanese fugu, also called the puffer fish, hosts a deadly poison in its ovaries and liver if prepared the wrong way and kills an estimated 300 people a year. An ounce of this dead- ly tetrodotoxin is theoretically enough to fatally poison 56,000 diners. Only a trained fugu chef (who must take a rigid govern- ment examination which only 30 percent of all candidates suc- ceed in passing) is permitted by law to prepare fugu. Yet the Japanese continue to consume their national love dish at the rate of about 10,000 tons a year. Since amateur chefs persist in preparing the fish and there is no known antidote for its poi- son, this amounts to a kind of culinary Russian roulette. One well-known Japanese love poem relates how “Last night he and I ate fugu. / Today I carry his coffin.” |
