blue sailor. An old name for the chicory plant, a blue wild- flower very common along roadsides in many eastern U.S. cit- ies. According to American Wildflowers (1949), the name comes from the legend of a beautiful girl who fell in love with a sailor. Her lover left her for the sea, and so she sat day after day along the side of a highway waiting for his return. Eventually the gods took pity on her and turned her into a chicory plant that wears sailor blue in its blossoms and still haunts roadsides in the hope of meeting her returning lover. The roots of chicory are often ground and roasted as a coffee substitute or flavoring. |
